Kitchen Operations Manager Job DescriptionKempinski Hotel Mall of the Emirates is seeking a highly skilled Chef de Partie to lead our kitchen team. As a key member of our culinary brigade, you will be responsible for organizing kitchen operations, preparing and serving a range of dishes, and supervising junior members of the team.Key Responsibilities:Pre-service Preparation: Prepare in advance all food, beverage, material and equipment needed for the service.Cooking and Service: Cook and serve dishes according to the restaurant’s menu, ensuring high-quality presentation and presentation.Team Leadership: Provide direction to the Kitchen helpers, including Commis, Cooks, Kitchen Attendants and Stewards, and ensure they are adequately trained and supervised.Cleanliness and Maintenance: Clean and re-set their working area, and maintain a clean and safe kitchen environment.Shift Briefings: Conduct shift briefings in the absence of the Manager, ensuring hotel activities and operational requirements are known.Performance Management: Work with the Superior and People Services Manager to ensure the departmental performance of staff is productive, and conduct on-the-job training and performance appraisals.New Staff Orientation: Ensure new staff attends Corporate Orientation within the first month of hire and departmental orientation is completed within the first two weeks.Discipline and Counseling: Coach, counsel and discipline staff in breach of hotel policies and departmental procedures, providing constructive feedback to enhance performance.Financial Management: Work with the Superior in the preparation and management of the department’s budget, and be aware of financial targets.Cost Savings and Recycling: Recycle wherever possible, and enforce cost-saving measures to staff.Incident Reporting: Log security incidents and accidents in accordance with hotel requirements.Communication: Communicate to the Superior any difficulties, guest or internal customer comments, and other relevant information.
