- Supervise operations of food service to ensure food is prepared in proper amounts, at proper times, according to standardized menus and recipes, and served at proper temperatures in a pleasing and attractive manner, where appropriate Identifies change and develops nutritional practice for the department, clinics, and inpatient services. Monitor food service operations to ensure conformance to nutritional, safety, sanitation and quality standards.
- Coordinate recipe development and standardization and develop new menus for therapeutic diets and regular diets.
- Monitors the tray line when meals served for conformance to prescribed diets and standards of palatability and appearance.
- Select, train and supervise workers who plan, prepare and serve meals.
- Advise food service managers and organizations on sanitation, safety procedures, menu development, budgeting, and planning to assist with the establishment, operation, and evaluation of food service facilities and nutrition programs.
- Organize, develop, analyze, test, and prepare special therapeutic diets.
- Maintain food production and distribution records and prepares necessary monthly reports.
- Prepares production for the daily regular and therapeutic meals.
- Prepares the production for all the therapeutic diets for the special fruits and salads, desserts based on the diets ordered.
- Monitor the Diet kitchen and train the therapeutic cooks regarding the preparation of all therapeutic diets.
